The ‘Catering Study Package’ consists of a selection of documents from the ‘Texture Modified Diet and Fluid Consistency Manual’. Documents have been selected from each section of the manual to cover all areas of texture modified diet and fluid consistency preparation, plating and safe food delivery processes which are critical for safe swallowing management. The package is a quality tool that enables administrators to determine the knowledge of each staff member and provides staff with awareness of their own knowledge. Results of the questionnaire included at the end of the study package can be used to direct further staff education.
